Mincemeat cake made without traditional flour.

50 gr salted butter
2 heaped tbsp sweet mincemeat
2 eggs whisked
100 gr ground almonds
20 gr ground coconut
1/2 tsp baking powder
100 gr mixed fruit
Mix butter and mincemeat together. Beat in eggs.
Measure ground almonds and coconut together with baking powder. Fold into mixture.
Add mixed fruit and turn into a 3 small loaf cake tins.
Cook for 20 minutes at 180o (not fan).
