These cakes can be made with eating or cooking apples. Add an extra tablespoon of sugar if using cooking apples.

Ingredients
50 gr sugar (or 75 gr if using cooking apples) – I keep the sugar low as I don’t like cakes to be too sweet.
50 gr salted butter
2 eggs
75 gr ground almonds
25 gr rye flour (you can substitute this with ordinary flour)
1 tsp baking powder
50 gr sultanas
3 eating apples (or 2 medium cooking apples) – peeled and chopped into small pieces
Juice of a lemon
Mix butter and sugar together. Add eggs. (Tip: if mixture starts to separate, give a quick whiz with an electric whisk or hand beater).
Measure ground almonds and rye flour together with baking powder. Fold into mixture.
Add sultanas and chopped apples; stir in grated marzipan and divide into 12 foil cake cases.
Cook for 30 minutes at 180o (not fan)
