Cherry coconut almond slice

This cake is made without any traditional flour – just ground almonds and ground coconut!

50 gr salted butter
40 gr sugar
3 eggs
100 gr ground almonds
20 gr ground coconut
1/2 tsp baking powder
150 gr chopped glacé cherries
50 gr marzipan grated

Mix butter and sugar together. Beat in eggs. Measure ground almonds and coconut with 1/2 tsp baking powder. Fold in cherries and grated marzipan. Fold all this into the creamed mixture.

Turn into 7in square baking tin or 2 7x4in foil trays.

Cook for 20-25 minutes for small trays or 30 minutes for 7in tray at 180o (not fan).
